We wanted the food to embody the fresh flavors of Greece, but did not need it to be slavishly traditional in style. To make sure the food was exceptional, we did blind tastings of Greek ingredients like olive oil and feta. We tried over twenty types of feta until we found the one we serve, a perfect blend of creaminess and saltiness. Everything we did received the same care and attention. We were scared to death when Evvia opened. Would anyone actually want to eat Greek food? Our market research found that many people did not hold Greek food in high regard.
Put 1 of the filling mounds in 1 of those imaginary triangles. Fold that triangle over onto the empty triangle, then flatten with your fingers so the filling is spread evenly. Continue folding triangles as if folding a flag, until you reach the end of the strip. Trim any overhang. Place, open side down, on the buttered baking sheet. Repeat the filling and folding with the remaining two strips, then repeat the entire process with more phyllo until all of the filling is used. You should be able to fit all 24 triangles on the buttered baking sheet, side by side.
